Carb sets are carb sets?
Had a problem with rust recently that resulted in quite a few problems and a lot of work. I took the carbs off to clean them and ended up breaking the main jet holder. To make a long story short, I bought a set of carbs off ebay. Went through them just to be certain and they were in better shape than my old set. The set I bought was for an 86 while mine is an 87. The first thing I discovered is that the fuel line to the carbs were 3/16" while my pump is 1/4". Now to set the idle jet screws, do I set them to the year of the carbs or the year of the bike?

according to info in the clymer shop manual the difference is only 1/4 turn. I'd split the difference or go with 2 turns out and do an idle drop adjustment per your service manual.
